3 Healthy Breakfasts

 

Breakfast 9

Hey lovelies,

So I’m just going to put it out there- I love breakfast! I honestly have no idea how some people go without it. As many say, it is the most important meal of the day. And with that in mind, I’m going to give you 3 (loosely termed) recipes for some delicious grub to knock up in the mornings.

Breakfast 1

First up we have a super yummy granola bowl. This is really versatile and you can use pretty much anything you’ve got in your fridge and cupboards! I grab 1 pot of yoghurt, whatever flavour you wish, and pour that into the bowl. Then for the granola. Now I find it quite difficult to buy granola as it all is so full of sugar. So I have spent literally about 15 minutes at the cereal section before going through all the nutritional values to find the one with the least sugar. So if the amount of sugar you eat is something you think about, you may want to have a shop around. If not then just grab whatever takes your fancy.

Anyway, so I grab a couple of handfuls of granola and sprinkle that on top of the yoghurt. Then you can really go nuts with the toppings. The list really is endless. You can add any fruit you like- try to see what’s in season. Perhaps mango, or blackberries, or any frozen fruit too! You could also add some nuts or seeds in too for some healthy fats! You probably wont need any honey on top as it should already be pretty sweet, but you do you!

 

Breakfast 3

 

Next is some super delcious french toast- or as we call it in our house ‘eggy bread’. This is really simple. Just crack a couple of eggs into a largish bowl. Then give them a whisk with a fork. Grab a couple of slices of your favourite bread- mine is a seed sensational one- and dunk it in the egg. Leave for at least 30 seconds each side so the bread soaks up some of the egg.

 

Breakfast 4

Then I put a frying pan on medium heat and melt a little coconut oil in. Carefully transfer the soggy bread to the frying pan and let it cook a few minutes each side until you can tell the egg is cooked. For this meal – for some added nutritional benefits – I also sauteed a handle of spinach for 1 minute in some coconut oil and added a few cherry tomatoes to my plate. And I always season mine and then serve with ketchup!

Lastly is my super delicious ‘fry up’! This may be not be as healthy, but definitely has some high nutritional value, and everyone deserves a bit of a ‘fry up’ every now and then!

Breakfast 6

For this meal, I firstly cut up a few new potatoes into small chunks and boil them until soft. I then pop my veggie sausage- obviously you can use real meat if you eat it- in the oven with some vine cherry tomatoes with a drizzle of olive oil on. Once the potatoes are cooked, I drain them, quickly wipe out the pan, add some coconut oil and fry them off until nice and crispy. Once I think everything is nearly ready, I fry a couple of eggs in some coconut oil and then very lastly I saute a handful of spinach in some coconut oil until it wilts.

Breakfast 8This is honestly so delicious! And look at that runny egg! I’m getting hungry writing this!
